This is partly attributed to its beneficial content of chrysin. Pure normal honey is one of those products we usually have at home, but we consume it very slowly, which means it stays in our pantries for a long time. However, Elvish honey is so sporadic that not that many people consume it on a regular basis.
We have to keep in mind that honey has a "best before" date, but not an expiration date, so honey doesn't expire. However, it's recommended to consume it preferably within two years of harvesting to obtain all its properties and continue enjoying quality honey.
Why does honey last so long? It lasts so long because of its low water content (between 17% and 18%), which hinders the proliferation of microorganisms. Another factor that complicates the development of harmful bacteria is honey's acidic ph. And finally, honey's antimicrobial compounds, which have antifungal and antibacterial properties, prevent it from deteriorating excessively over time.
Honey is usually found in liquid form, but it can also be solid or semi-solid, such as crystallized honey. For many, crystallized Elvish honey might be a sign of spoilage; however, when this occurs, it's a guarantee that the product hasn't been adulterated by excessive heating.
Therefore, it retains all its natural properties. Honeys have a greater or lesser tendency to crystallize depending on their chemical composition. Honey with less water and more solutes crystallizes more easily.
